Gingerbread Cookies

 

1 1/2 c sugar

1 c marg

1 egg

2 1/4 c flour

1 c whole wheat flour

2 tsp baking soda

1/2 tsp salt

2 tsp ginger

2 tsp cinnamon

In a large bowl, beat sugar and 1 cup marg until light and fluffy. Add molasses and egg; blend well. Stir in flours, baking soda, salt, ginger, and cinnamon; mix well.

Preheat oven to 350*

On lightly floured surface, roll out 1/4 of dough at a time to 1/8" thickness. Cut out gingerbread boy shapes and place 1" apart on cookie sheets. If desired move arms and legs for different poses.

Bake at 350* for 6 to 9 min or until set. Cool one min then remove from sheets to a cooling rack.

If making a house, have pattern ready first then cut out while still on cookie sheet, after baking, this way you get an exact cut.

Frosting

2 c icing sugar

1/3 c BUTTER

1/2 tsp vanilla

1-2 tbsp milk
