Jamaican Rice

and Peas

 

In a microwavable pot with a fitting lid:

Combine

1 tsp marg or butter (1 ½ tsp oil will do from food storage)

2 cloves minced garlic (1 ½ tsp garlic powder)

1 diced onion (2 tsp of onion powder)

-Fry until onions are brown

Add

1 can of kidney beans (with juices)

1 can water

1 cup rice

1/3 cup coconut

Dash of salt

Smaller dash of pepper

½ tsp thyme leaves

Pinch of white sugar

Stir well

Cook on high for 20 min.

Let sit for 15 min.

Cook on high for another 10 min.

Serve with REAL butter
