Perfect Pancakes
1 1/2 cups flour 1 egg
1 tbsp baking powder 1 1/2 cups milk
1 tbsp sugar 2 tbsp oil
1/2 tsp salt
Mix dry ingredients in a bowl. In a large bowl, mix together egg, milk, and butter. Add dry ingredients to egg mixture, mixing until almost smooth. Heat griddle until a drop of water jumps when dropped on it. Pour 1/4 cup batter for each pancake onto griddle. Cook for 1 1/2-2 min. or until edges lose their shine and bubbles break on top. Turn only once; cook for 30-60 more secs. Makes about 12 pancakes.
