Potato Veggie Soup

1 tsp butter

1 finely chopped medium onion

1 minced clove of garlic

2-3 c. leftover mashed potatoes

1 c. chicken broth

2 c. milk

1 1/2 c. chopped, cooked chicken

2 c. veggies, ie: broccoli, cauliflower, peas, carrots

1 c. grated cheddar cheese

salt and pepper to taste

In a heavy saucepan melt butter and saute onion and garlic for 2-3 minutes. Add the mashed potatoes, broth, milk, and chicken. Stir and simmer 5-8 minutes. Stir in the veggies and cheese. Season with salt and pepper. Stir gently until cheese is melted and soup is hot.
